It depends on what type of book it is as to which publisher you should send it to. So you'll need to do some research. Determine what type of book you have (crime, romance, whatever) and then research which publishers deal with that particular area. You can do this by going to your local bookstore and see which publishers publish your chosen field. Let's say you've written a crime novel, so check through the books under the crime section and make a list of publishers. Get their details from the phone book or from their web site, phone them and ask if they accept unsolicited manuscripts. Try not to get discouraged during this process. Many publishers will not, others might but are not accepting any more for a period of time. The good news is that some do!
Ask them for their guidelines and stick to it!
In Australia, there is a handy reference guide called The Australian Writer's Marketplace. This directory has contact details, guidelines, and which publishers accept unsolicited manuscripts. That makes things much easier.
If you are located outside of Australia then hopefully there is a simular directory in your country.
